Veggie (Romanian) soup for Santa!

Sour, healthy, yummy vegetable soup!

Yes, i added “Romanian” because it’s a Romanian dish due to the sourness of our soup. Romanians always add some sour stock knows as borch or cabbage juice to make the soup a super soup! 😉 You can also add lemon salt, it works perfectly fine.

  • potatoes - 6 medium size ones
  • onion - 1 medium size
  • carrots - 2 medium size
  • radish - 1 small one
  • garlic - 3 garlic cloves
  • vegetables mix (green beans, baby carrots, bean pods, paprika, zucchini) - 500 gr
  • tomato juice
  • olive oil
  • salt, pepper, rosemary, oregano, basil
  • sour stock / cabbage juice / lemon salt

  • pot for boiling the soup
  • spoon for mixing the soup
  • glass for adding water
  • peeler for potatoes and carrots

How I did it

Step 1

Prep the veggies!
I started with chopping the onion, peeling the carrots and the radish and adding them into the pot. While chopping the onions, i added olive oil + salt and pepper into the pot. Let these sautee perfectly until the onion gets that golden color and "cooked" smell. IMG_2608

Step 2

Finish prepping
While the onions&carrots were getting sauteed, I prepped the rest of the vegetables. I peeled the potatoes, chopped the rest of the carrots and radish. Washed them and chopped all in small cubic pieces. 15 minutes later, once the carrots and onions have been sauteed, I added water (2 glasses)
Now the boiling starts!

Step 3

Cooking the soup!
I added the rest of the ingredients: rest of the vegetables, some olive oil and left it to boil. I seasoned with some oregano, rosemary, basil and salt so that the veggies get the flavours while cooking.
45 minutes later, i added the tomato juice and the sour borch! And left the soup to boil for another 45 minutes.
