The famous meatballs are commonly made from an amount of meat rolled into a small ball, often along with other ingredients like: bread that was first soften in a bowl of water, onion, spices, herbs and some people add egg also.
Meatballs are cooked in every corner in the world and in each culture meatballs represent something, but you can find out more in the “Good to know” section of the website.
Now, let’s get back to cooking.
Take a look at the ingredients:
- Minced Meat - 1 kg - pork preferably or beef
- Tortellini – 250 gr - I chose it with a spinach filling, but others can choose it with cheese filling, for example or no filling at all: one bag
- Tomatoes – 3 pieces which I made tomatoes sauce from
- Garlic - 1 piece
- Onion - 1 piece (a big one)
- Mushrooms - 300 gr [Sometimes, I use carrots also, but not this time]
- Condiments - basil, parsley, bay leaves,oregano, salt, pepper
- Olive oil - 2 spoons
- Balsamic vinegar - 1 spoon
- Soy sauce - 1 coffe spoon
- Sugar - 1 coffee spoon

- Pot for boiling the tortellini
- Separate pot for boiling the mushrooms
How I did it:
Meatballs invasion: Take the minced meat and put it in a bowl where you add: minced garlic, salt, pepper and basil. Take a piece of bread – like have of a medium size bread and soften it into a recipient with water. After the bread is pulpy and can crumble easily, add it in the meatballs composition. Mix the meat with the bread. These was the moment when I, sometimes, sliced and minced 2 carrots and add it in the composition but I chose not to this time.
Meatballs invasion continues: After the meatball composition has been done, I took some meat, half palm, and roll it in the hand and made the meatballs, one by one. Resulted a total of 25 meatballs.
Cook the meatballs: The meatballs preparation came to end and now are ready to cook. I took olive oil and added in the pan and added there the meatballs. I let it there only for few minutes and after the meatballs were slightly cooked I put them in a pot.
The tomatoes sauce: While the meatballs were still in the pan I prepared the sauce in the pan in which I was about to move the meatballs: took the tomatoes, sliced them in cubic small pieces , added salt, pepper, a touch of olive oil, a spoon of balsamic vinegar and 2 spoons of soy sauce and sugar.
Back to meatballs: Once the meatballs started cooking in the pan I remove the pan from the cooker and put the pot with the sauce instead. Added the meatballs in the pot, added half glass of water and then added 3 bay leaves, basil, parsley. Smelled delicious!
Go, go, go with the tortellini: While the meatballs were cooking and absorbing the flavor of all ingredients, I prepared the tortellini. In the pot I put water, then added the tortellini and the balsamic vinegar and mixed.
Vegetables' turn: While the tortellini cooked, in the wok I put the mushrooms and onion and sate them. I added salt, pepper of course and oregano.
Checking: I checked the meatballs , they were smelling great. And the tortellini also. I tasted the tortellini and it seemed that after 10 minutes of cooking/boiling, they were ready to be served. I took the tortellini pot and put it aside and started mixing in the mushrooms. The onion was already smelling good, I tasted both mushrooms and onion and it seemed that after 15 minutes, they were ready.
After putting the vegetables aside also, I took another look at the meatballs and they were also ready to go. Plating time!
