No, that’s not me talking, it’s one of my Ramsay’s favorites quotes. Yes, scallops. I have finally cooked some, for the first time!
Here’s my recipe for a comfort scallops dish, not at all complicated or fancy.
- 2 fresh scallops (22-25 gr one)
- 250 gr mushrooms
- olive oil or sesame oil
- salt and pepper
- soy sauce
- you can add some mash potatoes to this dish too!
How I did it
The mushrooms First things first, clean and chop-chop the mushrooms. Drop some sesame oil (that's what I used) in the pan and leave to cook. Add some salt and pepper. You can add some herbs as well. I cooked the mushrooms for about 10-12 minutes in the wok, medium heat.
Time for the scallops! Clean them carefully and remove the orange part of the scallops, season with salt, pepper. And add them into the wok or pan, once you have finished with the mushrooms. The pan will be already heated, ready to get those scallops seared! Leave them to cook at medium to high heat, 3-4 minutes on each side. Cook them until they get that golden-sear colour The result should be...golden and tender! No burning! Now, you can serve the scallops with mushrooms only or with some potato mash as side too.
