This weekend we decided to make some tacooooos! We love mexican food. I love it because it has so many veggie options and my husband like it mostly because it’s spicier than other cuisines.

Tacos are simple to do. It’s a comfortable, street-food style but healthy dish! Let’s do this!


  • minced beef meet (500 gr)
  • mushrooms (250-300 gr)
  • tomatoes
  • garlic, onion, spring onion
  • cheese (200 gr)
  • 1 big avocado
  • fresh coriander, fresh mint
  • olive oil, balsamic vinegar, soy sauce, rice vinegar
  • lime or lemon x 2
  • cabbage/lettuce
  • peppers (1 big red pepper)
  • corn tacos

How I did it

Step 1

Prep the filings
Marinate the minced meat first! In a caserole we added the minced meat, marinated with the following: olive oil, rice vinegar, soy sauce, onion, garlic, ginger, coriander, salt and pepper. And left it in the fridge for 4 hours before actually cooking it.

I chopped the mushrooms, onion, red pepper, dropped some balsamic vinegar and soy sauce in the wok and dropped the onions. 5 minutes after i dropped in the mushrooms and red pepper too. Added in a pinch of olive oil, coriander, salt, pepper, some mexican condiments (fajitas) and mixed! Left for cooking about 20 minutes until they were perfectly sauted. And done! mushroom in the wok, sauted

Step 2

4 hours later
I just dropped the minced meat in a pre-heated wok with a table spoon of olive oil. And mixed, smelled,tasted, left it to cook for 30 minutes.

Step 3

The salsa! Chopped tomatoes for salsa in a caserole We've made some salsa as well, with tomatoes, spring onions, coriander, lime, rice vinegar, soy sauce, a pinch of olive oil. REFRESHING!

Step 4

Taco it!
Now it's time to fill in the corn crunchy tacos. We did not make the taco shells, we bought them from supermarket because they were cheap, in a good size and we did not have in our home in London all the necessary resources to make them from scratch. But if you have all you need, it's worth doing the corn taco shells from scratch!
Either way, to "Taco it" just take the corn taco and follow instructions below.
For the meaty taco
Add on bottom some lettuce, then add the minced meat, then add salsa and finish with cheese on top for a 'mouth-melting' texture. Minced meat tacos

For the veggie tacos
Add the lettuce on bottom, then add the sauted mushroom filling, chop some fresh pepper, add the salsa on top and finish with fresh avocado slices for a mouth-melting texture!
