Fish is the healthiest protein, from my point of view. And what I love most about fish is that it can be cooked quickly and in many ways: fry, poached, in the oven etc. You choose. 😉
Here are the ingredients:
- 2 beautiful Mackerel fish – medium size
- Zucchini – 2 pieces
- Red peppers – 2 big ones
- Mushrooms – 250 gr
- Rice – 300 gr
- Onion – 5 medium size
- Olive oil
- Balsamic vinegar
- Rice vinegar
- Salt, pepper, curry (for the rice)
- Orange & apple spices
- Pot for the rice
- Grill for the fish
How I did it:
Prepare the Mackerel: Slice each Mackerel fish in 2. Equal size if you can. I didn’t cut the tail, but I managed to cook it crunchy and my guests loved it. Make sure you clean the fish proper so that it won’t have scales. Once the fish is properly cleaned and sliced season it. I added salt, pepper and ginger flakes for extra flavor.
Prepare the vegetables: I chopped the onions, the red peppers and mushrooms in small cubic pieces; I chopped the zucchini only in round slices so that they can get that crunchy texture easier. Season with salt, pepper, Now, just add olive oil in the wok and drop the veggies inside.
Cooking the rice: I put the rice in the pot and boiled it for about 15 minutes. I tasted it several times because I wanted the texture to be spot on. Season with salt and curry, taste. I added the curry powder and it got that beautiful color. Smelled yummy also
Something smells fishy: So, the rice is ready, the veggies are in the wok, let’s take care of the fish. I left the fish the last one because, as you also know, fish cooks fast and I didn’t want it to get cold or rubbery if I had cooked it before the rice or veggies. Once the fish is already seasoned, get some olive oil into the pan/or grill (I chose the grill) and let it get hot enough un order to fry the fish quickly. Then, add the slices of fish into the grill and carefully watch those until they get a gold color. Turn the slices on the other side and let the fish fry evenly. Sense the smell? How about the taste? That’s it, then! Get it out of the grill.
Check all & season if necessary: Start seasoning the composition, Add salt, pepper. Taste. If needed, add more salt or pepper or both. Taste. Good. Really good.
