The pesto sauce is made from the following ingredients: crushed garlic + basil + pine nuts, all blended with olive oil and Parmesan. You have no chance not to love this sauce.
And it goes so well with the pasta. So, here it is, my pesto pasta with bacon dish!
- pasta - 250 gr
- bacon - 200 gr
- mushrooms - 200 gr
- pesto sauce
- basil, salt and pepper
- Parmesan cheese
- pot (for boiling the pasta)
How I did it
Prep the bacon Cut the bacon into thick pieces, I also cut the rind because I wanted to keep the moist meat only. Drop some butter into the wok and while it melts start cutting the mushrooms as well (I added canned mushrooms). Once the butter melted add the bacon and the mushrooms. Season with pepper, salt and some coriander, if you wish.
Prep the pasta Once the bacon and mushrooms are in the wok, add water into the pan with a drop of salt and a tea spoon of oil (so that the pasta pieces won't stick once to each other) Let it boil and once the water is hot enough, add the pasta inside. I left the pasta boil for ... around 10-15 minutes until it got al-dente (because the pasta will be cooked into the wok as well, along with the pesto sauce and the bacon).
Add the pesto Add the pasta into the wok along with the bacon and mushrooms, taste. If necessary, add some more salt, pepper, basil. Then, add the pesto sauce. I added 3 table spoons: 2 at the beginning, immediately after I added the pasta into the wok and another one at the beginning. Mix. And taste.
Season and voila! I added a drop of creamy balsamic vinegar, just for the extra flavour and also added some grated Parmesan cheese on top. This is a simple, delicious recipe good to share with the loved ones. 🙂 Come one, it has bacon, you can definitely nail it!
