Oven baked vegetables you’ve gotta try

Fast, healthy and simple vegetable baked in the oven!

For a few weeks i have been eating a lot of baked vegetables. That oven does magic!
Here are some ideas for how to make fast, healthy and simple vegetable bowls! I have tried them all!


  • cauliflower (500 gr)
  • broccoli (500 gr)
  • mushrooms (300 gr)
  • red or yellow pepper (300 gr)
  • leek (200 gr)
  • balsamic vinegar
  • salt and pepper
  • garlic poweder
  • olive oil
  • soy sauce
  • basil leaves

How I did it

Step 1

The first recipe is with: aubergine, yellow peppers and cherry tomatoes.
Step 1:
Wash all vegetables then start chopping: the aubergine in rounded slices (as per the aubergine form), the peppers julien style and the cherry tomatoes I left them as they are.
Step 2:
Add some olive oil in the oven tray, then add the vegetables and season with salt and pepper. I also added some sweet chilli powder. And some drops of balsamic vinegar. oven-baked-veggies Step 3:
Leave to cook - Fan - 200 degrees for 15 minutes. Flavour and add more colour with some basil leafs. penne pasta with veggetables

Step 2

Smoked veggies:
I like the vegetables to have that smoky taste and smell. And that's the main reason why i always add some balsamic vinegar on top of the vegetables before baking.

Step 1:For this recipe i simply cleaned the broccoli, cauliflower, peppers and seasoned with salt, pepper and some soy sauce. Then dropped some balsamic vinegar. No oil used.
I also sprinkeled some sweet chilly for a flavour kick.

Step 2:Left them to bake in the oven at 200 degrees. (not fan).
Once baked, I ate the vegetables with some hummus; both veggies and hummus go so well with ciabatta bread!

Cooked in the same style and with almost the same ingredients i have made another "baking session" with: broccoli, brown mushrooms, cauliflower, leeks and seasoned with garlic powder, balsamic vinegar and a drop of sesame oil (which i added at the end). Baked using Fan, at 220 degrees for 25 minutes. brown mushrooms and broccoli in the oven cook to smile

Step 3

3rd option is in the wok
Step 1:
Wash the mushrooms and peel them, wash and chop the peppers. Then add olive oil in the wok and add the mushrooms (don't chop them easpecially if they are small as they will shrink anyways).

Step 2
3 minutes later add the red peppers and the cherry tomatoes. Leave to cook for another 15 minutes, medium heat. I also dropped some garlic powder, salt, pepper and soy sauce. mushrooms-in-the-wok-cook-to-smile And ate them with hummus, of course! hummus-with-mushrooms-cook-to-smile
