Holy Guacamole!

We all know that since Christmas’ near, we’re in the fasting period. So, are you looking for a veggie recipe suitable for the fasting period? Well…I present…Guacamole!

“Guacamole” recipe comes from Mexico and now has become an international recipe. And the main ingredient is…avocado, of course. Did you know that the “Guacamole” recipe has pushed avocado sales dramatically over the world?

Ingredients:

  • 1 avocado (or 2 smaller ones)
  • 1 garlic
  • 1 (small) onion
  • 1 tomato
  • Olive oil (1 tea spoon)
  • Lemon juice or lime
  • Condiments: oregano, coriander
  • Jalapeno pepper (if you wish)
  • And when it’s not a fasting period, you can add yoghourt as well
  • Salt and pepper
  • Note: for an extra twist - you can add dijon mustard, but just a drop - you don't want to ruin the taste

Kitchen tools:

  • Blender / Fork / Potato masher
  • Bowl for the guacamole
  • Table spoon and Knife

How I did it:

Step 1

Chose the perfect avocado!
When choosing the avocado, make sure it is mature – it needs to be moist, pulpy and if the color is a darker green, that’s perfect.

Step 2

Peel the avocado
With a knife, cut the avocado in half, get the kernel out. Then, take one half in your hand and carefully cut it in cubes (vertical and horizontal cuts) – make columns and lines. The rubic pieces will be so easy to get out. Another method – if you don’t like this one) is to cut it in half, as previously mentioned, then take a table spoon and get the entire half out of its peel.

Step 3

Mash the avocado
If you want it to be perfectly mashed, like the potato puree, then mash it into the blender. I don’t prefer it that way, I enjoy taking a bite of small avocado pieces rather than giving it a yoghourt texture. 😀

Step 4

The other ingredients
Once you’ve transformed the avocado into a pasta, add the other ingredients: - slice the tomatoes in small pieces - slice the onion in small pieces as well - mash the garlic - slice the jalapeno in small pieces as well Then add the ingredients in the same bowl as the avocado pasta is.

Step 5

Last touches
Once you have all ingredients into the bowl, mix them all, add salt and pepper. Also add the condiments: oregano, coriander. And, squeeze the lemon / lime juice into the bowl.
condimente If you are not in the fasting time, you can also add a table spoon of yoghourt – it will give it a creamer texture.

Step 6

Enjoy it!
Taste, taste, taste – if you are happy with your guacamole, take a piece of toasted bread and dip it into the guacamole – it’s brilliant.

I’ve added some Guacamole on the burgers – I replaced the sauce or the mayonnaise with guacamole - a much more healthy choice!

“Snow” mushroom salad

Mushrooms. So simple  to cook and, perhaps, one of the few ingredients that are tasty even raw. Mushrooms are a good source of B vitamin and are very good in diets because mushroom have so little calories and are fatless.
