- Sweet potatoes (5 medium or 6 smaller)

How I did it:
Prep the chicken
Slice the chicken in 3 equal pieces. Remove the fat, if there is any. Then season with: salt, pepper, red paprika and ginger flackes.
Add the 3 slices of chicken breast into a pot. Drop olive oil into the pot. Then, add sliced and peeled tomatoes and tomatoes broth. Finish with adding enough water so that the meat is perfectly covered.
Peel the potatoes, wash each and then slice them in which form you like - I choose the round one because I find it easier to mash afterwards.
Once you are ready with the cut, add the slices into a pot and add water and salt.
Get the mushrooms ready
I chopped the onions and added them into the wok to get the texture I wanted before cooking the mushroom side dish.
Once the onions were cooking in the wok, I washed and peeled the mushrooms. Then, sliced them juliene and added them into the wok along with the onions. Season with salt, pepper and paprika.
Make sure you season correctly and taste, taste, taste. I also added tomato sauce and vegetable stock. The flavour...beyond tasty. So if you have stock make sure not to miss it. If not, add you can add tomato sauce and water, that should work as well. Taste and if necessary, add salt, pepper.
Mash the potatoes

If not, here is how I did: once the potatoes have been boiled, I got rid of the water and started mashing with the masher. I also added 1 table spoon of butter and 1 ladle of milk so that the texture of the mashed potatoes is creamy and without any pieces of unmashed potato. Add salt and taste.
Check the chicken
From time to time, check the chicken in the oven. Make sure it doesn't get dry so taste! It should look like this:
Once you are ready with the mushrooms and the mashed potatoes, you are ready to plate!
