“Frutti di mare” risotto in white wine reduction

How does that sound? Here is one dish with 2 options, whether you want shrimps risotto or seafruit mix risotto

Risotto, a pretty popular dish in the Italian cuisine and a hard dish to nail especially if you are doing it for the first time. You can easily undercook it or if you do not pay attention you can stick to the pan.
Follow my steps below and you will cook it to perfection.

I made 2 dishes – one with shrimps only and the other with a seafood mix. But the steps you must follow are the same, the presentation can be different.


  • Risotto rice ( (Carnalori or Arborio)– 200 gr
  • Baby fresh shrimps – 200 gr – you can always replace the shrimps with baby sea food
  • White wine – 2 table spoons
  • Mushrooms – 200 gr
  • Butter
  • Onion
  • Stock (vegetables stock) or Boiled water
  • Parmesan – 100 gr
  • Basil
  • Salt and pepper

Kitchen tools:

  • Wok
  • Pan
  • Pot

How I did it:

Step 1

Chop, chop and drop:
Chop the onion, drop the butter into the wok. Once you finish chopping, also drop the onions into the wok. Let them cook until they get a gold color and a sparkly texture.

Step 2

Prep the shrimps/ Frutti di mare
Wash the shrimps/or the sea food, season it with salt, pepper. When I made the shrimp risotto I cooked them separately and dropped them into the pan and squeeze some lime then. (add butter into the pan before, of course). Let them cook in a small heat. If you want the seafood mix risotto you can add the seafood into the risotto composition so directly into the wok.

Step 3

Drop the rice
The onions are ready? Did you wash the risotto rice? Good. Drop the rice into the wok. Add a glass of stock or boiled water. Let the rice boil.
Once the water or stock evaporates start the wine reduction – add wine. Let it reduce and then add another glass of stock. If you want a creamier risotto you can add another small piece of butter.

Step 4

Mix, taste, add
Mix and taste the risotto. Add the chopped mushrooms into the wok as well. Add stock and mix again. Then, let the rice boil.

Step 5

2 options
Option one: you can either drop the shrimps from the pan into the wok and mix into the risotto – but make sure the shrimps are not already cooked into the pan. Or you can finish cooking the mushroom risotto separately.
Option 2: if you chose to go with the seafood you can directly add the seafood into the risotto composition.

Step 6

Add the parmesan:
once the risotto is almost ready and has the creamy texture, the smell and the taste that you are looking for, you can add the parmesan.

Step 7

I choose for the shrimp risotto to simply add the shrimps on the risotto bed with some parsley on top and for the seafood risotto I added them composition into a small bowl, with a parmesan on top and basil for the presentantion.
