Spring is coming, sun is up so what goes well with this spring season? Fresh ingredients, light and easy-to-make recipes. A sandwich is always a good start. But not a basic ham & cheese sandwich, a more light one.
Here is the recipe:

- Chicken breast (200 gr)
- Corn (canned)
- Cream cheese / Cheese / Hochland
- Olive oil & soy sauce
- Condiments: basil, paprika, salt & pepper of course
- Bread (fluffy and crunchy bread baguette)
- For the salad: mixed salad cherry tomatoes, olive oil, balsamic vinegar, soy sauce, salt, parsley, pepper

How I did it
Prep the chicken breast Cut the extra fat from the chicken breast (if any, of course), slice the breast, season it with salt, pepper, basil, red paprika powder. Give it a smell (nice flavors, I know) and then drop olive oil in the pan ( butter would work just as fine), add the chicken slice into the hot pan.
Cook the chicken and the corn Check the chicken (breast chicken cooks quickly and can get dry) and drop some corn beans into the pan on top of the chicken. Non-cooked canned corn beans are boring. 🙂 Cook them in the pan and mix them into the olive oil and chicken juice.
Chicken cooked, corn cooked. Make the sandwich The chicken must have the golden color and a soft and juicy texture inside. Taste it and make sure of that. Now, cut the bread bagguette in half, spread the cheese on one side, add some corn grains. Then, add the sliced chicken breast and some other corn grains on top. You can also add some salad leaves or sliced olives - something to balance the ingredients in the sandwich. I choose to make a fresh salad that goes well with the chicken sandwich.
