It has been a while since I haven’t cooked a PROPER meal. “Time to change that”, I told myself. So I thought of doing a simple chicken and potato dish – perfect for a summer lunch.
Chicken and potato dish is what my mum used to do very often when I was little. And she does it today too, my brother loves. It’s simplicity makes it even more good (in my head) and brings back memories.
Here’s my recipe:
- New potatoes - 500 gr.
- Chicken breast - 500 gr.
- Onion - 150 gr.
- Red and yellow peppers - 200 gr.
- Mushrooms - 125 gr. (3 medium size ones)
- Celery - 150 gr.
- Salt, pepper, garlic powder, basil
- Olive oil, Soy sauce
How I did it
Start with the potatoes and the chicken Wash the potatoes (all of them), add water into a pot and salt and and put the potatoes into inside to boil for 20 min. Clean the chicken breast. Cut it in one-bites squares. Season with salt, pepper, add olive oil in the wok and drop the one size chicken bites in there for 5-7 minutes.
Get the veggies ready. Peel the mushrooms and chop the celery. Wash and season. Then, add them into the wok, over the chicken - make sure you have enough olive oil in the wok so that the veggies also cook. You can add some broth - I added some veggie broth in the wok, added a bit more salt and pepper, garlic powder and left to cook for another 10 minutes.
Finish the dish Check the potatoes - to check I usually use a fork and if the fork smoothly gets in and out of the potatoes then they are boiled enough. Add the potatoes on top of the other ingredients in the wok, add more broth, taste to make sure the seasoning is right, if not add more salt, pepper and then let it cook for another 20 minutes - ideally you should cover the wok, if not possible then that's fine. Add some soy sauce and some fresh basil on top for an extra flavour.
Ready to eat? 15-20 minutes later you should have everything ready to serve!I added few table spoons from the wok directly into a bowl and grated some parmesan on top of the bowl. Just because ... italian touch.
